Brew
We recommend these methods to brew our coffee.
One of the things that makes coffee so great is the variety of ways to brew, each of which pull out different components of the roast. Here are a few methods we prefer, but if you use other methods like a french press or auto dripper, here are some good rules of thumb while brewing with just about anything.
- 1:16 (coffee:water) ratio
- Water 200 degrees
- Grind: fine=more time, coarse=less time
- Pour consistency throughout brew
- 2.5 – 3 minute extraction time
Of course, in the end it’s up to you- you’re the one drinking the coffee, so get weird! Have some fun, mess around with your variables and find what works best for you. Enjoy!
Hario V60 Pour Over

MEASURE
20g (2.5 tbsp) medium-fine ground coffee.
PREHEAT
With hot water, wet your filter inside the V60 and pour out the water that runs into the decanter. Pour that into the mug you’ll be using to preheat it while you’re brewing.
TIME
Dump in your grinds and begin your stopwatch. Aim for a 2 .5 – 3 minute extraction.
BLOOM
Pour 45g over the grinds so they are completely saturated and wait 30-45 seconds until the bubbling nears a halt.
POUR
Continue to slowly pour 300g in a circular motion near the center of the cone, keeping the cone about 2/3 full
ENJOY
Empty and fill your preheated mug, pairing with light Tolstoy readings.
Clever Coffee Dripper

MEASURE
20g (2.5 tbsp) medium – course ground coffee.
PREHEAT
With filter in place, wet with hot water and empty into your desired mug.
TIME
Throw your coffee grounds into the clever and start a timer for 1:15
Add 300g hot water and agitate grounds, lightly stirring.
DRAIN
When 1:15 is up, empty your preheated mug and set the Clever directly on top, causing the seal to release and coffee to drain. Total time after draining should be around 3 minutes.
SIP
Go to your happy place and forget about those TPS reports, ignoring your coworker gawking at your mid-day treat.
Chemex Coffee Maker

60g medium-coarse ground coffee
Place the filter into your chemex with the 3-ply on the spout side. Rinse with hot water and dump that into your cup you’ll be using to warm it up.
Empty the chemex and add your grinds, starting a stop watch. Aim for 4.5 – 5 minute extraction.
Pour 60g and fully immerse your grinds, letting bloom for 30-45 seconds. You can begin the next pour at this time when the bloom subsides.
Slowly pour in concentric circles until you reach 960g, fully draining around 4.5 – 5 minutes.

AeroPress

14g fine ground coffee.
Warm up the mug you’ll be drinking from with some hot water, and wet the aeropress filter.
Add your grounds into the aeropress, upside-down and the cap removed. Set your timer for 1:00
Vigorously pour 200g over grinds, stirring to ensure full contact of water and grinds. At this time, empty your mug of the water your preheated with.
When your 1:00 is up, screw on the cap with the filter and press into your mug for 30 seconds.
Enjoy at basecamp while your fellow countrymen drink instant coffee loaded with powdered cream.
